So I am an absolute idiot in that I COMPLETELY forgot to take pics of this dish AFTER it was cooked, i think to many glasses of fine wine could be the cause! Doh! I will tell you it was nice and bubbly and gooey and perfect! I love love love Italian food and ever since I was diagnosed with a wheat allergy I have not been able to enjoy real pasta until I was introduced to the Tinkyada brand of brown rice noodles. They are so good - you can barely tell the differance! So that is why I decided to make stuffed shells. Now to forwarn you, I do not measure so I will be estimating for you. My shells come out slightly different every time but they are usually quite tastie. Unfortunately the hubs only gave me a 3. He tells me that that is the best he can give me because he doesn't like noodles. So I decided it was time to figure out why, so I asked. The hubs gets heartburn from pasta dishes and sometimes pizza. Can anyone take a guess as to why? Could it be the acidic tomato sauce and NOT the noodles?! So the hubs cannot give me anything beyond a 3 because he gets heartburn but he did say these are the best shells he has had so that is good I guess!
