Fried Plantains and cuban fine wine

So I have been obsessed with cuban restaurants as of late (Yes OK Cuba have some great fine wines) so I decided to see if I could make fried plantains myself at home! For my first attempt, these truly were not bad at all! The hubs thought it was ok...but he doesn't really like fruit for dessert. I think the next time I need to use more butter or ghee or oil or something. I will definitely have to try again. In any case, I was told that the only way to make good fried plantains is to make sure that the plantains are totally black before using them. I had one totally black and the other black and yellow. I have to be honest with you, it was a heck of a lot easier to peel the yellow one! I did use a knife to cut the skin off on both but the yellow seemed MUCH easier! Oh well!
