Oh my goodness, I can't believe it!! I finally get a 5 star on this recipe! Go me! Funny thing is, I completely made it up! I was a little worried that it wouldn't come out good but it was VERY tastie! I was originally going to follow this recipe for skirt steak that I found in one of my health magazines on the plane ride back from Seattle, however, after stepping onto my deck and assessing my container gardens, I realized I needed to do some serious trimming and therefore had a TON of herbs that needed to be used. So then I remembered what this waitress told me at this tapas place we went to while in Bellingham, WA last week. I had ordered this steak in a chemourra sauce - I could be totally butchering the spelling so I apologize. Anyhoo, she said it was based on an African dish and that it is basically a bunch of herbs thrown together. Sooo with inspiration from that dish, I came up with this and ended up with a 5 star for the night! I am still in shock, but the glass of fine wine helped reduce the shock.
