Honey-Scallion Tilapia

Quick dinner for friday night and not even a glass of fine wine to be seen ! The hubs has a gig tonight and normally doesn't eat din with me but since I was making a quick meal he decided to have some healthy fare rather than the usual bar food. Good choice if you ask me! I hate bar food. It is really not good for you. Great tasting when you have imbibed a little too much but otherwise not something you dream about eating! So I was originally going to make this fish and serve it over salad greens, unfortunately, my salad greens were not as fresh as I like them to be. So instead I served it with some corn on the cob and some sliced avocado. I love avocado especially during the summer months. It is nice and creamy and cold and has a wonderful texture AND it is a good fat! We like the good fats!
