Yeah so things have been quite busy as you can imagine! The hubs and I are preparing to move and we close on a house soon - almost too soon! We have just a little over a week to get everything in order and do you wanna know what that is? That is insane! So needless to say I was going to make this very yummy dinner all from scratch but the hubs was whining something about jerk chicken and you guessed a glass of Fine Wine. He wanted jerk chicken and I did not have ingredients on hand and at the ready to whip up jerk chicken, so I cheated. And it was a wonderful cheat! I picked up a jerk marinade and let the chicken hang out in that while I prepared the sides and the mango salsa! Quite frankly, it turned out delish!
