Well, tonight I had big plans of making filet mignon with sauteed onions and some roasted sweet potatoes and in my rush to get out the door this morning I forgot to take the steak out. Don't ya hate that? Normally, I do! Tonight, however, I did not mind. I really did not have my appetite much of today and most of my food has gone to waste. If I made the steak I would have felt awful wasting such a piece of beautiful meat so it is probably good that I forgot! That being said, I had to scramble to come up with something to make! Luckily, I had a rotisserie chicken on hand that I picked up at the farmers market yesterday! So chicken salads it is! The good thing about salads is the hubs loves them, you can never go wrong with a salad and him! So we ended with a clean plate this evening, at least on his part. I couldn't finish my salad which is on par for my meals for today. I did, however, do better than any other meal today! So that is good! Struggled to find a fine wine to go with this but I managed :-)
