Pecan Crusted Chicken

My meals have been very quick as of late and I haven't even had time for a bottle of "fine wine". Lots to do now that I am going to be moving soon. I hate moving - it is such a pain to pack up everything and then move and then unpack everything. I am really looking forward to having a new home with more space. But I gotta be honest, I really do not want to move. Sometimes I wish I could be like I dream of Jeannie and bop my head and BAM! it is done! That would be nice! So instead, I work and I skimp in other areas like my cooking. Luckily, just because something is quick doesn't mean it has to be tasteless and this was one tasty dish! Inspired by Eating Well's recipe I came up with this slight variation. I served my dish with broccoli with lemon, salt and pepper and J's dish with sautéed portobellos (I serve those a lot - they are his absolute fave!) and we both had roasted red potatoes!
