Teff Crusted Tilapia with Peach-Mango Pico de Gallo

A solid 4 stars from J this evening, even without a glass of his favourite Fine Wine! I consider that still on a roll! I have to admit I am seriously shocked by this rating for this particular meal. I made this and while I was making it I thought he was going to HATE it! Really glad that was not the case, but again I am in shock! First of all, teff is an ancient gluten-free grain native to North eastern Africa. It has a very nutty flavour and it can be a little overpowering to those not expecting it. I love it and I actually used the flour to make home made fig newtons last year and they came out EXCELLENT! Maybe I will make those again and post them...hmmmm. Anyhow, so didn't think he would like teff. Secondly, the pico has peach and mango in it, two fruits J is not very fond of...so I find it extremely interesting that he really liked this dish and had no problem clearing his plate! The recipe came from the current copy of Clean Eating which I received in the mail while I was on vacation. I love this magazine! Sometimes their seasoning needs a little help BUT I can always start with their recipes and add the seasoning I think may work and that is exactly what I did tonight!
